21: Espresso Sugar Cookie Recipe is a recipe for an aromatic cookie filled with espresso- a perfect way to start the day. This cookie has a sugary base, minimal spread, and is paired with a vanilla bean royal icing. This recipe contains only regular pantry ingredients and does not use cake flour. *IMPORTANT* This recipe uses espresso powder, which is a baking ingredient. Not instant espresso powder for making coffee. I use King Arthur espresso powder. *IMPORTANT* This recipe is slightly different than #21 Espresso Sugar Cookie, which has a sugary base. This recipe has a higher ratio of butter to sugar and is more of a buttery shortbread sugar cookie rather than a classic sugar cookie.
