I don’t think there’s a better fall treat than a fresh, warm apple cider donut, and the cookie version is an equal rival. These apple cider donut cookies are full of apple cider flavor and rolled in cinnamon sugar for that classic apple cider donut vibe.

  • butter– I always use unsalted butter in my recipes so I can accurately tell you how much salt to add, but the truth is that when I’m just baking personally, I often use salted butter and nothing is ever too salty. 
  • apple cider– Make sure to get apple cider that has spices and is a deeper color rather than apple juice.
  • granulated sugar- To use in both the cookie and in the cinnamon sugar coating.
  • brown sugar– Rather than just use granulated sugar, this recipe also uses brown sugar to give a little extra chew to these cookies.
  • salt– Diamond Crystal kosher salt is the best type of salt for baking and cooking, so I totally recommend grabbing a box here on Amazon or here at The Spice House where you can use my code EMILYLOGGANS for 10% off. It will last a while. If all you have is regular table salt, use only half the amount of salt the recipe calls for. In this case, you would use ½ teaspoon of regular table salt rather than 1 teaspoon of Diamond Crystal kosher salt.
  • vanilla– I use vanilla bean paste because the flavor is more intense and generally better, but vanilla extract is just fine here.
  • egg– just a single whole egg to provide some structure and chew
  • all purpose flour– for structure
  • baking soda– for some spreading and crisping
  • baking powder or cream of tartar– for lift

supplies you’ll need to make apple cider donut cookies

  • whisk & a bowl– Something nice about this recipe is it doesn’t require a mixer. All you need is a whisk and a bowl.
  • saucepan– to brown the butter
  • hand mixer– to make the frosting (unless you have really strong biceps and can use a wire whisk)
  • spatula– A spatula is essential to scrape down the bowl throughout the process. Without scraping, you’ll end up with an unevenly mixed dough and cookies that are inconsistent. 
  • scale– If there’s one thing I can convince you of, please let it be a kitchen scale. 🙏🏻Using a scale makes everything easier with baking, and it ensures you get the same results every time. Flour is so easy to over-add with volume measurements, and a scale solves that problem.
  • parchment paper– So helpful for keeping cookie sheets clean, preventing sticking, and preventing over baking the bottoms!
  • baking sheets– I use these cookie sheets for years, and they are amazing as are these from Nordic Ware.
  • cookie scoop– I like to use a #30 cookie scoop for these.
  • large round metal cookie cutter– to “scoot” the cookies after baking

Ingredients

Scale

cookies

226g (1 cup) unsalted butter, salted is fine

2 ice cubes (or 2 tbsp cold water)

1 ½ cups apple cider, reduced to ¼ cup

55g (¼ cup packed) brown sugar, light or dark

150g (¾ cup) granulated sugar

1 tsp Diamond Crystal kosher salt (or ½ tsp regular table salt)

2 tsp vanilla bean paste or extract

1 whole egg, large

270g (2 ¼ cups) all purpose flour

¾ tsp baking soda

2 tsp baking powder or cream of tartar

1 tsp cinnamon

¼ tsp nutmeg

⅛ tsp cloves

cinnamon sugar coating

50g (¼ cup) granulated sugar

1 Tbsp cinnamon

Instructions

Pour the apple cider into a saucepan over medium-low heat and let it simmer until there is only about ¼ cup left. This will take a little while, anywhere from 10-30 minutes. To check the amount, pour it into a heat proof measuring cup. If it’s not yet ready, pour it back into the pan and keep simmering.

While the cider is simmering, brown the butter over medium heat until golden brown, whisking often (especially towards the end of the process) to ensure the milk solids don’t burn or stick to the bottom of the pan. Pour the browned butter into a heat proof mixing Bol and whisk in two ice cubes (or two tablespoon cold water). Set aside.

In a bowl, combine the flour, baking soda, baking powder, and spices. This, together and set aside.

To the browned butter, add the sugars and salt and mix well to combine. Add the vanilla, egg, and ¼ cup reduced cider and whisk until the mixture is emulsified and lighter in color.

Fold the dry ingredients into the wet until there are no more streaks of the dry ingredients.

Cover the dough and refrigerate for 30-60 minutes.

Preheat the oven to 350 F (177 C).

To make the coating, stir together the sugar and cinnamon in a small bowl.

Scoop the dough with a #30 cookie scoop into balls before rolling in the cinnamon sugar mixture. Place the dough balls on a parchment lined baking sheet about two inches apart. Freeze the balls for 15 minutes to keep them from spreading too much and becoming extra thin.

Bake the cookies for 12-14 minutes. Sprinkle the warm cookies with more cinnamon sugar mixture and let them cool on the cookie sheet for a few minutes before transferring them to a wire rack to cool completely.
